Scrambled Egg Whites with Spinach, Chorizo & Goat Cheese Recipe

Brunch is one of those magical meals that combines the best of breakfast and lunch. It’s a time to relax, decompress, and enjoy good food. Today, I decided to whip up a delightful brunch dish that has quickly become one of my favorites: Scrambled egg whites with spinach, chorizo, and goat cheese.
I was inspired to make this dish after craving something nutritious yet indulgent. Scrambled eggs are a classic brunch staple, but I wanted to switch it up a little. By using egg whites, I knew I could keep it light while still adding flavourful ingredients that bring life to the dish. Spinach for the greens, spicy chorizo for a bit of kick, and creamy goat cheese to tie it all together - it sounded like a winning combination.

Ingredients:
1 tsp olive oil 
35g baby spinach
2 tbsp crumbled goat cheese or feta cheese
100g diced chorizo
4 large egg whites 
¼ teaspoon tabasco sauce
salt
freshly ground black pepper
2 tsp olive oil

Instructions:
1. Start by washing and chopping your spinach. Dice the chorizo into small pieces and crumble the goat cheese. This will make the cooking process smooth and quick.

2. Cook the Chorizo: In a medium-sized skillet, heat a splash of olive oil over medium heat. Add the diced chorizo and sauté for about 5-7 minutes, or until it becomes crispy and releases its spicy oil. The aroma will fill your kitchen and make your mouth water!

3. Sauté the spinach: Once the chorizo is cooked, add the chopped spinach to the skillet. Sauté for another 2-3 minutes until the spinach wilts and brightens in color. The flavours of the chorizo will infuse the spinach, creating a delicious base for the eggs. Stir in the tobasco sauce.

4. Scramble the eggs In a bowl, whisk the egg whites lightly with a pinch of salt and pepper. Pour the egg whites into the skillet with the chorizo and spinach. Reduce the heat to low and gently stir with a spatula. Cook until the egg whites are just set but still creamy, about 3-4 minutes.

5. Add the goat cheese: Remove the skillet from heat and sprinkle crumbled goat cheese over the top of the scrambled egg whites. The residual heat will warm the cheese just enough, making it delightfully creamy.

Serving Suggestions: This dish shines on its own, but it can also be paired with a fresh salad or some roasted tomatoes for added color and nutrition. And let’s not forget about a rich cup of coffee to complete the brunch experience!
