Pumpkin, Halloumi Cheese & Rosemary Recipe

With this festive time of year comes the beloved tradition of carving pumpkins. But instead of letting your creativity run wild only on the exterior, why not turn that pumpkin into a delicious dish?

To prepare this treat, I roasted diced pumpkin until it was tender and caramelized. Then, I added pan-fried halloumi cheese, which boasts a unique texture and flavour that perfectly complements the pumpkin. The fresh rosemary elevated the dish, adding an aromatic touch.

Serves: 2

Ingredients:
400g pumpkin, skin removed and thinly sliced
4 tbsp olive oil
2 cloves of garlic, thinly sliced
4 tbsp fresh rosemary, chopped
salt and freshly ground black pepper
200g halloumi cheese

Instructions:
1. For the pumpkin place the pumpkin in a bowl with 2 tablespoons olive oil, garlic, and fresh rosemary into a large bowl and season to taste with salt and freshly ground pepper. Mix together.

2. Heat a frying pan over low heat.  Add the pumpkin mixture and fry gently until cooked through.

3. For the halloumi cheese, heat the remaining oil in a separate small frying pan over a medium heat and fry the cheese for 2 minutes, turning occasionally until golden brown.

4. Serve the pumpkin on a warm plate with the halloumi cheese on top and garnish with the fresh rosemary.
