Yes, it was more gnocchi this afternoon. Gnocchi - the Italian dumpling that feels like a warm hug wrapped in a cloud of carbs! And who needs to spend hours rolling, cutting, and swearing at stubborn potato dough when you can simply grab a pack of ready-made gnocchi faster than you can say “Mangia!”?
That’s right,my fellow food enthusiasts; today, we’re diving into the world of culinary shortcuts with a decadent dish featuring mushrooms and blue cheese that’s perfect for when your idea of cooking is limited to boiling water (and maybe even forgetting that).
First up, grab your pack of ready-made gnocchi like it’s the last slice of pizza at a party. Toss those fluffy little pillows into a pot of salted boiling water—like a splash of happiness into your dreary life! As they bob up and down like confused buoys, you can take this moment to sauté some mushrooms in your trusty skillet. The sizzling sounds of garlic and mushrooms frying will drown out the whispers of your friends questioning your restaurant-style meal. When the gnocchi ascends to the surface, they’re ready for a glorious meet-and-greet dance with the sautéed mushrooms. Add a drizzle of olive oil and just like that, you’re a bona fide culinary wizard!
Now, here comes the pièce de résistance: the blue cheese! Just when you thought this dish couldn't get any fancier, crumble that pungent delight over the gnocchi and mushrooms. If blue cheese had a personality, it would probably be that eccentric friend who shows up dressed flamboyantly and instantly steals the show. Watch as it melts gracefully, creating a creamy, aromatic sauce that could make even the most judgmental food critics swoon.
Serve your dish with a flourish and a casual "Oh, this? Just something I whipped up!"—all while secretly feeling like a kitchen rockstar. Cheers to the art of laziness, where gourmet dining meets minimal effort, and every bite tastes like sweet, cheesy victory!
Prep Time: 10 mins
Cook Time: 10 mins
Serves: 2
Ingredients:
200g ready-made gnocchi
1tbsp olive oil
small knob of butter
1⁄2 large onion, roughly chopped
150g shiitake mushrooms, sliced
1 garlic clove, chopped
75g blue cheese
large handful spinach, roughly chopped (keep a few leaves aside for garnish, if desired).
Instructions:
1.Bring a large pan of water to the boil and cook the gnocchi following the packet instructions. When they float to the top of the pan, they are ready. Drain and set aside.
2. Meanwhile, heat the oil and butter in a large lidded frying pan. Add the chopped onion and mushrooms and cook for 1 minute over a high heat, then turn down the heat to medium, put the lid on again and cook for a further 5 minutes, stirring a few times.
3. Remove the lid and add the chopped garlic and cook for a further 1-2 minutes and then stir in the gnocchi. Scatter over blobs of the blue cheese and then scatter over the chopped parsley.
