Before I knew it, there was a sticky puddle on the floor, like the scene of a sweet crime, and I was left contemplating whether to call in the chef police or slide gracefully across the kitchen like a figure skater.

Ingredients:
4 boneless, skinless chicken thighs or chicken breasts
salt and pepper, to taste
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup honey
1/4 cup soy sauce (low sodium recommended)
1 tablespoon cider vinegar (or rice vinegar)
1 teaspoon grated fresh ginger (optional)
1 teaspoon sesame oil (optional)
sesame seeds and chopped green onions for garnish
Instructions:
1. Season the chicken breasts with salt and pepper on both sides.
2. In a large skillet, heat the olive oil over medium heat. Add the chicken to the pan and cook for about 6-7 minutes on each side, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.
3. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
4. Add the honey, soy sauce, apple cider vinegar, grated ginger, and sesame oil (if using) to the skillet. Stir to combine and bring to a simmer.
5. If you prefer a thicker sauce, stir in the cornstarch and water mixture. Cook for an additional minute or two until the sauce thickens.
6. Return the cooked chicken to the skillet and coat it well with the honey garlic sauce. Let it cook for another 2-3 minutes, allowing the chicken to absorb the flavours.
7. Remove from heat and garnish with sesame seeds. Serve the honey and garlic chicken over rice or with steamed vegetables for a complete meal.
