Chilled Carrot, Red Bell Pepper & Orange Soup Recipe

Ingredients:
1 tbsp olive oil
1 onion, chopped
2 carrots, peeled and chopped
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
1 red bell pepper, chopped
1 orange, peeled and segmented
940 ml vegetable broth
60 ml plain yogurt (optional)
chopped fresh cilantro or parsley for garnish (optional)

Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.

2. Add the carrots, bell pepper, orange, vegetable broth, salt, and pepper. Add the salt, pepper and paprika. Bring to a boil, then reduce heat and simmer until the vegetables are tender, about 20 minutes.

3. Puree the soup with an immersion blender or in a regular blender until smooth.

4. Stir in the yogurt, if desired.

5. Chill the soup for at least 4 hours before serving.

6. Garnish with chopped fresh cilantro, if desired.
