Ingredients:
500g tagliatelle
1 tbsp olive oil
1 clove garlic, minced
375ml cream
3 tbsps chopped chives, plus extra for serving
1/4 tsp mustard powder
200g smoked salmon, cut into strips
2 tsp lemon juice
500g fettuccine or other long flat pasta
3 tbsp sun-dried tomatoes, chopped
2 tbsp grated Parmesan cheese for serving
Instructions:
1. Heat the oil in a large frying pan, then add the garlic. Cook briefly, being careful it doesn't burn.
2. Add the cream, cheese and mustard powder. Season to taste with the salt and pepper and bring to the boil. Reduce the heat and simmer, stirring often, until the sauce thickens.
3. Add the salmon and lemon juice and stir until heated through.
4. Meanwhile, add the fettucine to a large pan of rapidly boiling water and cook until al dente. Drain well and return to the same pan. Toss the sauce through the pasta, then divide among four bowls. Top with the sun-dried tomato, Parmesan and extra chives.
