Life can get awkward and sometimes my once beloved kitchen becomes an abandoned territory. That's exactly what happened to me - I found myself in a cooking rut, with almost a month passing by without me even turning on the oven.
However, today, something changed. Filled with a renewed sense of excitement, I decided to break free from this culinary hiatus and dive back into the world of cooking delicious dishes. And what better way to reignite my passion than by making a mouthwatering chorizo pilaf.
Chorizo Pilaf is a flavourful dish that combines the smokiness of chorizo with the richness of rice. It is a versatile recipe that can be customized with your favourite vegetables and spices, making it a delightful and unique addition to any meal.

Ingredients:
1 tbsp olive oil
1 large onion, chopped
250g grans of cooked chorizo, sliced
2 garlic cloves, crushed
1 tsp smoked paprika
400g tinned chopped tomatoes
250g basmati rice
600ml stock
1 lemon, zest only
2 fresh bay leaves
small bunch of parsley, chopped
Instructions:
1, Heat the olive oil in a large pan, then fry the onion and chorizo until the onion is soft and the chorizo has released its oils.
2. Stir in the garlic and smoked paprika, then tip in the tomatoes and rice. Stir well to coat the rice in the tomato juices.
3. Pour in the stock, add the lemon zest and bay leaves, then bring to the boil.
4. Reduce the heat to low, then cover and cook for about 15 mins until all the liquid is absorbed and the rice is cooked.
5. Stir through most of the parsley and then scatter the rest on top.
