This spicy Indian Bombay recipe is an easy vegan and vegetarian dish that really packs the heat with five fresh green chillies. If you like your Indian food spicy, add a couple of extra chilies for a real boost.

Ingredients:
3 tbsp all-purpose flour
1/2 tsp kosher salt
2 medium unpeeled potatoes, cut into 1-inch pieces
235ml olive oil
5 small green chillies, minced
3 cloves garlic, minced
2 tsp soy sauce
1 tbsp chilli sauce
3 tbsp tomato paste
1/2 tsp granulated sugar
kosher salt, to taste
freshly ground black pepper, to taste
2 tbsp chopped fresh cilantro
3 medium green onions, coarsely chopped
Instructions:
1. Combine the flour, 1/2 teaspoon of salt and a bit of water in a bowl and whisk together until smooth.
2. Coat each potato piece with the batter.
3: Deep fry in the oil until brown on all sides.
4. In a separate skillet, heat the minced green chilles, minced garlic, soy sauce, chilli sauce and tomato paste in a bit of oil, stirring well.
5. Add the sugar, salt, pepper and potatoes and stir well to coat the potatoes with the spices.
6. Remove from the heat and garnish with the freshly chopped cilantro and green onions and serve.
