Now and then, when I'm cooking a meal for myself or others being alone in front of a countertop clustered with ingredients creates a tranquil feeling inside me. I adore the job of preparing food, the sound of the blade on the chopping board. the aroma of garlic and fresh herbs or lemon zest tickling my nostrils. When I'm alone in the kitchen there is nothing that distracts me from these gratifying times.
It is cold outside and I wanted to prepare and cook something to keep everyone warm. This dish is not only delicious but also gives that cozy home feeling that is often craved for at this time of the year.

Serves: 2
Ingredients:
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, finely sliced
2 lemongrass stalks, outer layer removed and finely sliced
80g cherry tomatoes
600ml boiling water
4tsp soy sauce
8 shiitake mushrooms, sliced
10 king prawns, shells removed and de-veined
2tbsp fresh chives, chopped
fresh coriander, chopped
Instructions:
1. Heat oil in the pan and add the chopped onion and sliced garlic. Fry until softened.
2. Add the sliced lemongrass, half of the cherry tomatoes and all of the boiling water. Reduce the heat and simmer for 10 minutes.
3. Add the soy sauce, shiitake mushrooms , remaining cherry tomatoes and simmer for three minutes. Add the prawns and cook for a further 5 minutes.
4. Stir in the chopped chives and divide contents between 2 serving bowls. Garnish with chopped coriander.
