Have you ever tried making polenta at home? I personally love it and I think it's a dish that looks spectacular with a lot of combinations. This recipe was introduced to me by my brother and is a sure winner!
Creamy polenta can be served as a straightforward lunch and even as an extravagant entry at an evening gathering. One of the ingredients suggested to me by my brother was peaches but today, as a first try I used nectarines.
As I have already mentioned, polenta is extremely versatile so for a breakfast dish you can experiment with alternative soft fruits such as berries or plums, for example. More suggestions for replacement ingredients would be nutmeg or coriander instead of cinnamon, walnuts or pecans instead of almonds, maple syrup instead of honey. At the end of the day, it's all down to one's own taste.

Ingredients:
75g polenta or cornmeal
475ml water
120ml milk
½ nectarine, sliced
1 tbsp almonds. chopped
½ tsp cinnamon
1 tbsp honey
1. Add water to a saucepan over a high heat. Whisk in the cornmeal.
2. Bring to a boil, stirring constantly.
3. Reduce heat to medium once thickened.
4. Stir in the milk and continue to stir until polenta reaches desired thickeness.
5.Scoop into a bowl and top with preferred fruits and nuts.
6. Sprinkle on the cinnamon and drizzle the honey on top.
