Oh my gracious! What is there not to like about gnocchi? It is such a resourceful ingredient, whether homemade or store-bought it is such a simple feast, embarrassingly simple in fact and simple dishes are appreciated now and then, right?
Gnocchi can be treated as a side dish. A side dish to pretty much anything! Pair it with broiled chicken or even a plate of mixed greens or salmon. This recipe ticks all the boxes - meat and two veg (and loads of other delightful ingredients), and can be treated as a whole dinner.

Ingredients:
olive oil
500g ready made gnocchi
250g tin of chopped tomatoes
2 tbsp tomato paste1/2 tsp salt
1/2 tsp pepper
1/2 tsp lavender
1 tbsp dried basil
1 tbsp dried rosemary
1 tbsp dried parsley
1 tbsp dried thyme
1 medium sized onion, chopped
2 cloves of garlic, crushed
1 large zucchini/courgette, peeled and sliced
400g chicken breasts
Instructions:
1. Bring a large pot of water to the boil. Add a generous pinch of salt.When water is boiling, add gnocchi and cook until gnocchi floats to top, about 3 minutes. Remove gnocchi with large slotted spoon.
2. Combine the the chopped tomatoes, tomato sauce and dried herbs in a mixing bowl and stir until well combined. Set aside.
3. Bring a large pot of water to the boil. Add a generous pinch of salt. When water is boiling, add gnocchi and cook until gnocchi floats to top, about 3 minutes. Remove gnocchi with large slotted spoon and set aside.
4. Pour tablespoon of oil into a large skillet or saute pan and bring it over medium-high heat. Add the chicken breasts and sear on each side for 3-4 minutes or until browned.
5. Add the minced garlic to the pan and cook an additional minute until garlic is browned and fragrant. Reduce the heat to a medium-low simmer and pour the tomato sauce mixture over the chicken breasts. Simmer uncovered for about 15 minutes until chicken is cooked through and easy to chop.
6. When the chicken has about 6-7 minutes left to simmer, heat a teaspoon of oil in a separate pan over medium heat. Add the sliced courgette and sprinkle in salt and pepper to taste. Cook the courgette for 5-6 minutes or until it softens and starts to brown. Set aside.
7. When the chicken has finished searing, remove from the hot pan and chop the breasts using a fork and knife and add back into the sauce.
8. Stir in thoroughly until well combined. Add the prepared courgette to the chicken and stir until coated and combined. Add the gnocchi, mix well and serve. Grate with Parmesan cheese, if desired.
