Avocado toast may have started out as a super trendy food, but the breakfast staple looks like it's here to stay. It's not hard to see why: crusty whole wheat bread and mashed avocado pair incredibly well together, creating the perfect crunchy, creamy bite. The topping possibilities are endless, too!
This is a break away from the normal cereal and croissants morning breakfast. One approach to take this to the next level is by including new radishes. The blend of these flavours together makes for a delightful start to the day or a midday snack.

4 eggs
a few thin slices of radish
1⁄2 tsp salt
1⁄2 tsp ground black pepper
Instructions:
1. Prepare the whole-wheat bread, either by dry-roasting them on a pan or in a toaster.
2. Peel the avocado, pit it and mash it in a bowl with a fork together with ground black pepper.
3. Heat a small non-stick frying pan for a minute or so, then add a knob of butter and let it melt. Don't allow the butter to brown or it will discolour the eggs.
4. Pour in the egg mixture and let it sit, without stirring, for 20 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan.
5. Let it sit for another 10 seconds, then stir and fold again. Repeat until the eggs are softly set and slightly runny in parts. Remove from the heat and leave for a moment to finish cooking. Give a final stir.
6. Wash the radishes, clean them and cut in to very thin slices.
7. Spread the warm toasts with mashed avocado, and topped with scrambled eggs and radishes.
