6 egg whites
220g caster sugar
150g dark chocolate, melted
35g plain flour, sifted
200g fresh dates, pitted and chopped
cocoa powder , for dusting

1. Preheat oven to 180°C (350°F). Place the egg whites in a large bowl and whisk until stiff peaks form.
2. Gradually add the caster sugar, 1 tablespoon at a time, and whisk for 30 seconds. Once all of the sugar has been added, scrape down the sides of the bowl and whisk for a further 3–4 minutes.
3. Add the chocolate, flour and dates and fold through. Spoon into a lightly greased 22 cm springform tin and bake for 40–50 minutes or until the outside is crisp.
4. Serve with whipped cream and dark chocolate. Serve warm or cold.
